Quiche


This is my favorite recipe for quiche! It's easy...it's fast...I found it on the Internet...it is a recipe from Karin Calloway. We have farm fresh eggs from our beautiful chickens...and it's a great way to use them up...plus, using fresh ingredients from our garden....and of course the ham!!!! I usually make two, using the least expensive frozen pie shells from the supermarket, and I try to use real whipping cream because it looks prettier and sets up better!!!... but in a pinch you can use milk! One pint of whipping cream is two full cups...since my eggs are a bit smaller than the commercial eggs in the supermarket, I use 10 or so, to make it another two cups...I use a 4 cup Pyrex glass measuring cup and my hand held mixer to mix it all up.....I put the meat/veggie mixture in each of the pie shells, cheese on top, then pour the cream and egg mixture over the top and put it into the oven!!!! The ones that are in the oven now, have fresh ground pepper and dried basil sprinkled on the top!!!!

1 9-inch deep dish frozen pie shell
4 ounces chopped ham
4 ounces shredded cheddar cheese
4 eggs
1 cup whipping cream, half and half or milk
1/2 teaspoon salt
1/4 teaspoon ground black pepper

Preheat the oven to 375 degrees F. Sprinkle ham and cheese over the bottom of the prepared frozen pie crust. Beat together eggs, whipping cream, salt and pepper in a medium bowl and pour over other ingredients. Place on a baking sheet and bake for 40 to 50 minutes, until center is puffed. Allow to sit 5 minutes before cutting.Makes 4 to 6 servings.
